These rich chocolate cookies are perfect for St. Patrick’s Day, topped with a refreshing mint icing!


Ingredients

For the Cookies:
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
For the Mint Icing:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • 2-3 drops green food coloring

Instructions

  1. In a large bowl, beat the butter and sugar together until light and fluffy.
  2. Mix in the egg and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  4. Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Roll out the dough on a lightly floured surface to about 1/4 inch thick.
  7. Cut out shamrock shapes and place them on a parchment-lined baking sheet.
  8. Bake for 8-10 minutes until the edges are set. Let cool completely.
  9. For the icing, whisk together powdered sugar, 2 tablespoons milk, and peppermint extract.
  10. Add green food coloring and adjust the consistency with more milk if needed.
  11. Drizzle or pipe the icing onto the cooled cookies and let set before serving.

  • Chill the dough thoroughly for easier rolling and cutting.
  • For a bolder mint flavor, adjust the peppermint extract to taste.
  • Store cookies in an airtight container for up to a week.
